Recipe: Bacon & Vege Risotto

Because it’s Sunday night, no-one could be bothered with a complete meal. So this was the easy solution.

Recipe below the cut.

Fry bacon. Once cooked remove from pan. In the oil fry onion and garlic. Then add rice, cook until browned. Then add a few cups of water with a chicken stock cube diluted in it.
Simmer.
Add all your vege (broccoli, mushrooms, celery, tomato… anything!) and simmer until cooked through.
Serve with a sprinkle of grated parmesan cheese.

Very easy.
