
INGREDIENTS:
600g lean beef mince
1 chopped onion
1 garlic clove
2tsp ground cumin
oil spray
2c couscous
2c hot chicken stock
2tbs fresh lemon juice
low-fat natural yoghurt, to serve
Combine the beef, onion, garlic and cumin in a large bowl. Season with salt. Shape 30 level tablespoonfuls of mixture into meatballs.
Lightly coat a large non-stick frying pan with oil. Cook meatballs in batches, turning, for 8 minutes or until brown and cooked through.
Meanwhile, place couscous in a large bowl. Stir with fork while pouring hot stock over. Cover and set aside until the liquid is absorbed. Add juice. Taste and season with salt.
Spoon couscous onto serving plates. Top with meatballs. Serve with yoghurt and steamed vegetables.

Don’t know about the couscous though, don’t think I’ve ever tried it before..

I had never had couscous like that, and never cooked it before. I’ve had couscous in Lebanese food.
It was delicious! I think it helps that I cooked the couscous in hot chicken stock and sprinkled with lemon juice - otherwise it’s totally flavourless. Maybe some stirred through parsley or coriander would help it? Hmm will remember to try that next time!!

haha!! funny you should say that. I’ve always wanted to own/run a restaurant or a bed and breakfast!
but geez… so many things to do in life! I’m planning to write a book at the moment too. Plus finish Uni, work & travel! lol.
I think the restaurant & B&B will have to wait a few years.
